Once connected using Air Display, you will be able to use the extra display in both landscape and portrait mode, easily reconfigurable by rotation.
Using Air Display with your iPad means that you will also have a touch based input surface connected to your Mac. Thus, you will be able to use your finger to interact with any Mac application like you would if you'd have a touchscreen based monitor.
